100% Sauvignon Blanc from Yorkville Highlands, Mendocino County, CA, 1.5 hours north of Sonoma. The same fully organic vineyard as the Bordo, featuring only Bordeaux varietals Planted in the early 2000s. The grapes here saw semi-carbonic and whole cluster fermentation. 200lbs were tossed into a stainless steel tank and filled to the brim with direct-pressed juice, which was then left untouched until bottling. The single most vibrant and alive of the wines received. Strong aromas of ripe white peach, sour apple candy, lemongrass, and hay are easy to pick out here. There is a slight spritz, high acid, and a thoroughly satisfying 5g/L of residual sugar bringing balance.
