The fruit pet-nat is macerated + co-fermented with other fruits to achieve the final bottling. Made from San Juan Island fruit, predominantly apples from Oak Knoll farm, a wonderful sheep farm on the south side of the island. Italian Prune Plums from the same farm were left in the sun for a few days to ripen, then halved and added to the fermenting cider.
