I really appreciate wines from the Austria-Hungary border and set out to make a wine inspired by these bright and refreshing easy drinkers. I knew I had to find a vineyard that was carved out of the forest and remained a little wild to be able to capture the feel of the wines I was inspired by. A unique opportunity presented itself in the Alexeli Vineyard, carved out of the forest and still surrounded by a ring of trees it really looked the part. When I met the owner and learned his minimal intervention sustainable farming techniques I knew it would be great. An added bonus is this site is a short distance away from the winery so it would be a chance for us to showcase our local terroir, not an easy feat for an urban winery.
The pH of the wine is very low so fermentation was a slow and long process going well into spring. Luckily we were able to use the very last spring snow and freeze to cold stabilize. A minimal amount of sulphites were added before bottling. This wine is unfined, unfiltered and completely wild. Lemon drink, white flowers and sea spray on the palate with gummy candy, orange blossom and spring on the nose.
