2020, am I right? This harvest brought a lot of unique challenges one of which was a week of smoke settling into the Willamette Valley. We were lucky and able to get a sample tested to verify the presence of smoke taint in the grapes. We at Flat Brim have vowed never to break a contract so we made plans to save this vintage and create something great.
The plan was to pick early in the morning to keep the clusters cool and intact, then pack them into fermenters with dry ice and seal them tight. We waited five days and pressed off into insulated bins. The idea was to ferment as fast as possible to get the wine off of the solids and lees that may contain the damaging guaicol. Once we verified the wine was dry it was racked into tank and treated with 30ppm sulphites to stop malolactic fermentation. Malic acid lends a lot of incredible flavor to this wine and we didnt want to lose any. In order to keep sulphite addition minimal we opted to filter at bottling.
What we have in the bottle is truly Not Tragic. A bouquet of cherry blossom, foggy morning and vanilla precedes a velvety mouthfeel with tropical fruits, gala apples and chalk.
