Piquette is the original drink of grape-farmers and workers in France and across much of the grape-growing areas of Europe. While not technically wine, it is an amazing, recycled product. Typically after pressing for our regular wines we would have discarded the grape skins however this year we found a way to reuse them. We soaked the leftover grape-skins in water and after a few days, we fermented the mixture on skins. Before fermentation was complete, we pressed the skins again, let it settle briefly and then bottled so that we trapped a light spritz in bottle.
The combination of grapes we used here gave us bright, tropical aromas with heaps of pineapple, mango, passionfruit, guava, lemon and orange layered over lightly spicy cinnamon, nutmeg and funky, yeasty aromas. On the palate, a lime zest and grilled pineapple front gives way to bright, lemon acidity on the finish. Bright yellow, cloudy and super-refreshing it’s like if hard-seltzer, Pet Nat and heritage-cider had a child! Light in alcohol (only 5.5%), just chill until ice-cold and enjoy with people you like…or even those you don’t!
